Kangaroo Soup

Wow, I love this Kangaroo Shank Soup my wife made the other day (and I'm having for lunch right now). It's one of things that's just so good, I had to tell people.

I'll be really annoyed if she hasn't recorded the recipe somewhere. We've tried a few recipes (generally based on ox tail soup), and this one was by far the best. Alas I do not have a copy of the recipe myself at this stage. I'll have to get her to record it in our recipe database using that fabulous recipe management application, "Yum".

i was thinking the same thing... sudenly i feel like an early dinner...

tell ya what ollster... if you pop over to my place i"ll cook ya some up, the missus won't mind.... or since i don't drink much and am used to bein the "driver".... of course the fact that i am currently livin a couple of hundred kms south of Perth WA and don't know where Nik lives might be a slight obstacle....

OK... here 'tis...
Keep in mind you need a VERY big pot for this. We used a large slow-cooker.
This is based on an ox-tail soup recipe - we've tried a few, but this one has been the best so far, and is very simple. We usually use Bennets Wallaby tails, however, this week it was 3 large Forester Kangaroo shanks (yes, they were from an authorised cull).
Sorry it's not been converted to metric yet.
Ingredients:- 2-4 kangaroo or wallaby tails or shanks
- 3 quarts cold water
- 1 cup barley (not quick-cooking), rinsed
- 1 bay leaf
- 6 black peppercorns
- 2 cloves garlic, finely chopped
- 4 ribs celery, sliced 1/4-inch thick
- 1 large onion, coarsely chopped
- 1 tablespoon beef base or 1 1/2 teaspoons salt
- 4 carrots, sliced 1/2-inch thick
- 1 (14-ounce) can diced tomatoes with juice
Preparation:Add water and roo tails to pan. Bring to a boil, skimming off any frothy foam that comes to the surface. Add barley, bay leaf, peppercorns, garlic, celery, onion and beef base. Bring back to a boil, cover, reduce heat to low and simmer for 1 hour.
Add carrots and tomatoes, bring to a boil, cover, reduce heat to low and simmer for 1 hour or until carrots, barley and meat are tender. Remove meat from bones and return to soup. Remove bay leaf and serve.

Mmmm... sounds really good. I usually chuck some turnip into my red meat soups, does an amazing job of soaking up flavour.

I knew there must be a reason for the existence of turnips. I haven't found it up until now.

Tomatoes? That's a desecration. Bleeccch.
Without that it'd make a good base for Borsch. Yummm.

hey folks.... at some stage i'd love to all meet up at a easy, family accessable spot (junction hut maybe?) and have us all byo favorite walk meal as a shared lunch / smorgasbord type thingy...... what ya think?
