I recently picked up the Exped Gemini III tent (cost ~$450 with footprint). I'm yet to use it in anger (apart from embarrassing the family by living in it in the backyard when I first got it). Our first trip in it will be at the end of this month.
Even though most trips there will only be two of us, with most of the tents today not as wide as they were when I bought my previous tent (probably 15 plus years ago), I decided on a 3 person tent. Although there is a little more weight than a two person, it will hold the two of us and our gear alot more comfortably. Also on the times there will be three of us (myself and two sons under 12) we will still fit comfortably (until they are bigger and can carry more gear and then we will possibly go for two tents).
The Gemini III will just fit three full sized sleeping pads side by side (without any overlap) but has plenty of room still at the head and foot. There are also two big vestibules.
The other tent I looked most closely at was the MSR Mutha Hubba, which also looked good, but opted for the Exped Gemini because it was a newer design, slightly larger & also on special when I bought it.
