DeHy Sweet potato

Mon 01 Oct, 2012 1:25 pm

Anybody tried it yet??

Not really sweet potato as only 17% and the rest being ordinary spud mash and lots of sweeteners etc

Hmm might have a go at making my own.
Has anyone else bothered to make it or even their own 'Deb' type of de-hy spuds?
How would you do it?
I'm on days off now so have time to tinker about a bit.

Made my own dehydrated sweet potato some years ago. Tried thin-ish slices and small cubes (similar to dehydrated carrot). I think I gave it a quick blanch first, but I'm not sure that's necessary. I like to dehydrate a variety of vegetables separately so that I can make my own combinations and get some variety in our meals. Never tried home-made mash of either sort of potato. I have to say that the only dehydrated thing that has gone moldy was potato cubes. I obviously left too much moisture in them...

I tried the Edgell Dehy Sweet Potato for my lunch today (always try things at home before they go out on a trip).

I'm not a big de-hy mashed potato fan but this didn't taste too bad. It probably needs some extras to give it a more interesting texture (perhaps some cashews, currents or dried onions) but its got alot of potential. Don't be put off by the baby food look.

And another big benefit is all you have do is add boiling water and stir - no cooking time. The 90g packet would be a hearty portion for one person with some extras added.

We have tried chunks, cubes, chips. They were all a bit chewy but were still Ok mixed with deb. if somebody works out the mash please post. Perhaps pre-mashed and dried like fruit leather?

I added a packet to a BC meal last weekend when I was feeling particularly hungry. It's a pleasant addition, but not a meal in itself.

Add a couple teaspoons of powdered milk, plus some salt and pepper and it's make sit taste yummier :)

Might add some olive oil to the next one :)

Cheers.

I tried this last week, made normal mashed potato of about 2/3 orange sweet and 1/3 white. Spread it out thin on baking paper and dehydrated until it was like fruit leather. Haven't been out walking to test the rehydration yet, but I've been eating it straight as a snack and it's not too bad. I would probably put in a bit more salt next time. I'll let you know how it goes.

Thanks Josh, the key will be in the cooking, how quickly it turns back to mash, whether you can get it cooked so not too sloppy. Some dehy cream/sour cream would be nice!!

Hi All.
We had a bit of a dehydration session at the BWC meeting from a club member who used to work in the food industry and he had a lot of very good helpfull hints and tips etc.
OK preamble done
Add a small amount of chickpeas in the mash before dehydrating it and it will break up easier and also re-hydrate better.
He also adds it to pumpkin soup to do the same.
Very interesting.
Cheers
