I need to cook a 3 course meal using a gas/fuel stove. Any good ideas of what to cook. ?

How about

home dried soup
home dried Dahl and rice
banana custard (or chocolate custard might not be as heavy).

Any particular occasion? Or just wanting a big meal while out walking?

I will often do either cuppa soup or 2 minute type noodles for starter, Back Country for main, and I don't have dessert so I do a cuppa tea and either ginger nut snaps or toblerone chocolate for after. That way all the cooking I do is boil water. Too easy!

I was in Darwin a few weeks ago and on the second last night I had a three course meal to use up my supplies. It was flavoured couscous for entree, pasta with a Continental three cheeses sauce sachet, mixed in to the undrained water and a small weight watchers sachet of custard powder. Sometimes with pasta I’ll use the pizza topping sachets but they’re only of tomato flavour. For a drink I take Milo, you don’t need milk with it.

Hi Molly,
If it's your first night out it will depend how much weight you are prepared to carry.
We often have steak and veg for first and/or second night. Depends on weather too, as frozen and cold stuff will last longer in winter - I carry a chicken feed light insulated cooler bag for cold stuff.
Soup is good first course in winter, or in summer you could go with smoked salmon (keeps well out of fridge for a few days), with some salad ingredients like cucumber or zucchini and cheese, and maybe some crackers.
How much fuel do you plan to carry?
Main course could be a stew of some sort - I like Hungarian Goulash or maybe a curry.
Do you have two pots or do you need to do one pot wonders?
Rice is my base of choice as I'm gluten free, otherwise couscous is a good bushwalking addition to a stew for a one pot wonder.
Is this for a special dinner or is it a two minute noodle affair? - I can't eat them anyway, but there are lots of gourmet things you can do walking with a fuel stove!
Rice Pasta for me or normal pasta for others is also a good choice - make the sauce separately if you can - so much nicer than those packet jobbies.
Later on in a walk I will have risotto with home dehydrated mushroom and leek, garlic, onion and parmesan (shave the good stuff off a block onto the meal - not the spew cheese stuff).
Dessert is more of a problem for me being gluten free as all the easy ones have fillers in them which have wheat flour as a base. Custard is easy with maybe some rehydrated dried fruit.
It really depends how much time, fuel, patience and cooking ability you have. I'm not much of a cook, but hubby is a chef and he has shown me over the years that it is actually possible to do seemingly amazing meals with minimal fuss - sometimes less is more!
Edit: Oh, and don't forget the wine, some wineries are making ok box monsters now if you want lightweight, or spirits are good value for weight - personally I like whisky awa - (whisky and water). Good whisky only of course (for a real treat Larks or Sullivans Cove are both Tasmanian choices).

i dont think ill allow her to have any booze... being a 14yo scout and all ;) the leaders on the other hand, should have something in the first aid kit... ;)

Scrub that one for a Master Chief meal unless day seven of a ten day walk, in that case yum.

On a more serious note, frying, boiling and steaming (with a trivet) forms the bases of bush walking cooking with gas so any recipes with those techniques is a goer. So a decent soup in the plastic bags is goer, followed by say pan fried salmon and steamed vegetables, with say a boiled desert in a tin. Oh, yes, it weighs heaps but no problems with scraps :D especially if you walking companions' firm name starts with an S :lol:

Yes, I wouldn't normally eat like that on a walk shorter than about 5 days. But not knowing what was actually required, I thought I'd go for something that could work for a walk of any duration. :-)

Oh dear. Must impress the Scoutmaster...
But you're going to be pretty darned busy clanging pots and pans hither and dither (and the clean up...)

Entrée Cuppasoup with croutons or fairybread (prepare at home first; wholemeal or 9-Grain is my fav); could also substitute Salada or RyeVita.
Main: Backcountry grub e.g. roast or nasi goreng. Served appealingly so as not to resemble baby chunder (must appease the Scoutmaster, remember!? :lol: )
Dessert: Astronaut icecream with grated dark chocolate and crushed cashews: I use my Swiss army knife wood-saw tool to really ho-down the choc and my feet to crush my nuts).

Afters: a shot of Sherry. Offer one to the Scoutmaster too if he approves...
Then: Bed...

Erm... what are they called now Macca81? The term is still common enough.
They were respectfully called Scoutmasters in the 1970s when I was a Queen's Scout before losing the track with the Girl Guides.

Just Scout Leaders. 70's was 40 years ago, even in the 90's when i was a Scout we didnt call them Scoutmasters. i believe they are still called that in the USA however. Everyone knows the term Scoutmaster, but i have not heard it used in the movement for... umm... i cant even remember!
