Suggestions for overnight walk with baby, TAS

Hi there.
My partner and I will be in Tassie during the Christmas period and are hoping to do at least one overnight bushwalk with our 5mth old baby boy. We will carry him in an "ergo" (a baby carrier). He finds it comfortable, but overheating can be an issue, since he sits against my chest. So we plan on doing walks that are both short and easy. Here are some thoughts, just to give you an idea of what we're after...
Freycinet: Walk into Wineglass bay campsite. Leave partner with baby to pick up a second load from the car and bring back to camp. Camp the night, and walk out the following day.
Apsley Gorge: Do the loop as a day walk, then set up camp at the campsite 500m from the carpark. Not really an overnighter but its got walking and camping...
Any other suggestions? Any lesser known tracks with quiet campsites would be great.
