Hobart Trip - What to do and how to do it?

Just looking for ideas and some validation of my own. I'm coming down to Tassie again for 2 weeks from Boxing Day. This time based in Hobart but just myself and my wife, who is not a bushwalker. No firm plans but I want to do some walking myself. Mrs W has given me a leave pass if I want to do a walking trip for 3 or 4 days. Not sure I'm comfortable with leaving her on her own that long so I may just do day trips here and there. Otherwise, although I've done the OLT before, I was thinking about coming in via Arm R. to explore around Pelion and just doing the last bit again. Or possibly Frenchmans Cap, which I haven't done. Otherwise I might just do some day trips around the Wellington Range and possibly the South/SW. Sticking with day trips would simplify my packing arrangements and I could defer the longer ones for another time.
I'm still thinking and researching the forums, but in my brainstorming so far here are a few things that came to mind:
We're flying in, so I won't have a car. It's likely I'll end up hiring one, assuming transport to intended places is limited (which it usually is in my experience). However, any walk suggestions that are easily accessible by public transport from Hobart CBD would be welcome. Or anywhere, if practical, I could get to by bicycle, assuming I could hire (or buy a really cheap used one) and leave it unattended securely. I'm also investigating Tassielink and other bus options, as well as taxis.

- Hartz Peak across to Mt Snowy and return via Emily Tarn (I've done Hartz before)
In the same spot - Devil's Backbone (read someone's recent report here)
Cockle Creek to South Cape Bay
Labillardiere Peninsula on South Bruny Is. Is Bruny practical as a day trip destination?
Cape Raoul
Things at Mt Field I haven't done yet; eg Field West, Finish off the Tarn Shelf circuit.
Mt Wellington area. Previously I've been to Collins Bonnet, have also done a circuit from Ferntree via the summit but I know there is plenty more to explore
