Kangaroo Island - doing 3 instead of 5 days?

Currently planning a Kangaroo island trip in either September/ October (hopefully)

Since it's not hikable overnight, planning to do it via the KI Caravan park and be shuttled in and out each day.

I'm just wondering if the middle 3 days are the best, and if it's worth dropping day 1 and 5? What the scenery is like, pros and cons for anyone who has been?

Hubby isn't a fan of long days inland walking in the scrub.... so unless there's decent views on and off, I'm not sure he'd be too keen on day 1 and 5 from what I've read.

Any other recommendations on side trips that are a must etc?

Hard to say without knowing what it looks like now.
Day 1 was mostly forested.
Day 5 is quite short, very nice if done early morning.
The trip to Admirals Arch is worthwhile but you can do that by car afterwards.

If on a time limit days 2, 3 & 4.

If really tight do day 3.
