Advice on TAS bushwalking

Hi. We live in the northern hemisphere and like to go to Australia during our winter so we can experience two summers a year and get out hiking in the mountains. The last time we were in Tasmania was in 1991 and we bicycle toured for three weeks starting in Launceston and ending in Hobart. Memorable on that trip was the long hill from Deloraine to the Great Lake and later riding mainly uphill from Miena to Tarralea on News Year's Eve. During that trip the weather was mainly cloudy and cool. Since then we have done a lot of back country cycle touring and bushwalking in mainland Australia as well as New Zealand.
Now we are older hikers and don't like being out in bad weather. BOM seems to agree that Tasmania's best weather month is February. I'd like to hear some comments about February weather from walkers. Are the predictions mainly accurate or is the weather like New Zealand's summer forecasts which usually are "mainly fine with a risk of showers about the ranges?"
I've browsed through this forum and have gleaned a number of ideas of where to go for short and multi day trips.
