I can't quite picture the hinging of your windshield. However, if you or anyone else wants to make a high-temperature hinge that will stick to metal, then Acetic Cure RTV silicone rubber will do the trick. It can be made strong by embedding shirt cotton fabric into it.

I doubt that your metal windshield will get that hot, otherwise, your cooking would be very inefficient. I imagine you could easily cut little slim hinges from a small sheet of the DIY impregnated fabric. Then they could be stuck on with more RTV to your windscreen at the required hinging points.
Here is a sheet of the impregnated cotton that is probably much bigger than you would need. Do you have any RTV in your back shed? I could post you a bit of the impregnated cotton in an 'old age pensioner letter' if you like.
Here is a photo of a hinging flap on a high temperature stop pipe jack. The extra ring of pure RTV is added to give a temperature resistance of 300C.
