Re Grampians: you can purchase brochures titled "Southern Walks: Grampians National Park: and "Northern Walks: Grampians National Park" at the Brambuk Visitor Centre in Halls Gap. They are not much more than a colour version of this:

And tough luck if you're not going past Brambuk on your way. Some regional visitor centres will stock these brochures - means you can't plan an early start though, if you have to wait for a visitor centre to open.
There are a couple of useful PDF's on the Parks Victoria website, with distances and track notes (but not maps) for the overnight walks in the Grampians.

I have asked for this at the Hamilton Visitor Centre, they were out of stock and not sure whether Brambuk would have it. I haven't tried buying it online yet.
