Hi all,
Does anyone have any suggestions for any hiking trails in Vietnam or Thailand?
I'm hoping to find a multi day option 3-7 days.

Chiang Mai & Chiang Rai in Northern Thailand has always been a mecca for trekking. Many tours companies do 2, 3 & 5 day treks.
These guys seem to have put together a trail using old tribal pathways from the outskirts of Chiang Mai to Chiang Dao. 5 days.

Chiang mai walk and talk hiking...are a happy bunch of regular hill walkers.

Unguided...close to Chiangmai.
Circuits or end to end. Can be joined together.
Some Np's may close during the wet season.
A little thai may come in handy and maybe a rabies shot for the numerous yapping village dogs you will encounter.

Fancy pants in Vietnam used to be popular trek. Highest in Indochina @~3150m
